What each ingredient does

Cod
Provides the main protein, which firms and turns opaque as it cooks in simmering water.
Melted butter
Adds richness and fat that complements the mild, delicate flavour of the poached fish.

The step that matters

Bring the water to a boil quickly, then reduce to a simmer. A rolling boil can toughen and break up the delicate fish flesh, while a gentle simmer cooks it evenly and keeps it moist.

Swap the parsley

How well each one fits the dish's main ingredients (fish, butter):

  1. Capersfits better
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Nutmegfits less well

Fit is the average pairing score against fish, butter. Candidates are from the same food group and used in at least 100 recipes.
