Veal a LA Bourgeoise

Ingredients

Directions

Prepare the veal

  1. Lard the veal with bacon.

  2. In a clean stewpan, brown the veal on both sides. Sprinkle with a little salt.

  3. Add the onion with the clove and the bouquet garni. Wait until the meat begins to stick.

Braise

  1. Add the stock.

  2. Cover and simmer for 40 minutes.

  3. Prepare the button onions and carrot pieces.

  4. Remove the onion and bouquet garni.

  5. Add the button onions and carrot. If needed, add more stock or hot water.

  6. Cover and simmer for another 30 to 40 minutes.

Finish and serve

  1. Carefully transfer the veal to a hot dish.

  2. Arrange the vegetables around the veal.

  3. Pour the gravy over it. If the gravy is too thin, reduce it by boiling.

  4. Stir.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fillet of veal
Forms the main body of the dish, becoming tender as it braises slowly in liquid.
Fat bacon
Adds fat and savoury flavour to the meat as it renders during browning and larding.
Button onions
Add sweetness and soften during braising, flavouring the gravy.
Carrot
Adds natural sweetness and a tender texture after slow simmering.
Stock
Provides the liquid that braises the veal and forms the gravy.

The step that matters

Brown the veal on both sides. Browning builds deep flavour through the Maillard reaction, and the meat must be well coloured before liquid is added, or the gravy will taste flat.

Swap the clove

How well each one fits the dish's main ingredients (veal, onion, carrot):

  1. Celeryfits better
  2. Parsleyfits better
  3. Cuminfits better
  4. Clovethe original

Fit is the average pairing score against veal, onion, carrot. Candidates are from the same food group and used in at least 100 recipes.
