Macaroons

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch and pound the almonds, then dry them in the sun.

Make and shape the batter

  1. Mix the almonds with the sugar, and gradually add to the well-whisked egg whites.

  2. Drop pieces the size of an egg onto wafer paper.

  3. Sprinkle sliced almonds on top.

Bake

  1. Bake in a moderate oven (350°F / 175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main flavour and the body of the macaroon mixture.
Sifted sugar
Sweetens the batter and helps it hold together as it bakes.
Egg whites
Whisked to foam, they give the macaroons structure and help them set in the oven.

The step that matters

Adding the almond and sugar mixture to the egg whites. Adding it gradually to well-whisked egg whites keeps the foam from collapsing, so the macaroons bake light and set evenly rather than dense or flat.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
