Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Boiling milk
Its proteins coagulate and bind fine particles, helping the punch clear as it stands.
Lemon juice
Adds acidity that brightens the spirits and balances the sweetness.
Sugar-candy
Adds sweetness that rounds out the sharp citrus and strong spirits.
Rum
Provides the main spirit base and body of the punch.
Brandy
Adds warmth and body to the spirit base.

The step that matters

Adding the boiling milk. Milk added to the mixture must be boiling and poured in carefully so its proteins coagulate and trap sediment. Then the punch needs to stand undisturbed so the solids settle, which is what gives a clear result.
