Why it works: Chicken and beef match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 2,148 recipes. Both carry 2-furfurylthiol, which smells coffee, roasted. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chicken
- Contributes body and savoury flavour to the stock as it simmers.
- Veal
- Releases collagen into the stock, adding body and richness to the set gelatin.
- Veal bone
- Adds collagen and depth as it simmers slowly in the water.
- Gravy beef
- Adds meaty flavour and body to the stock during simmering.
- Isinglass
- A gelling agent that sets the clarified liquid into a firm jelly.
- Sherry
- Adds aroma and a touch of acidity and sweetness to the finished jelly.
The step that matters
Straining until clear. Straining through muslin removes fine particles that would otherwise cloud the jelly. Cloudiness comes from suspended fat and protein, so a clear set depends on careful straining before the liquid cools.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
