Cheese Souffle

Ingredients

Directions

  1. Melt the butter in a saucepan over low heat.

  2. Add the mignonette pepper and fry for 2-3 minutes to infuse the flavor.

  3. Strain the butter into a bowl to remove the pepper grains.

  4. Clean the saucepan and return the flavored butter to it.

  5. Stir in the flour, salt, black pepper, and cayenne pepper until well combined.

  6. Pour in the milk and cook over medium heat, stirring until thickened.

  7. Remove from heat and let cool slightly.

  8. Beat in the yolks of the eggs one at a time until smooth.

  9. Grate the Parmesan cheese and mix it into the mixture.

  10. In a separate bowl, whip the egg whites with a pinch of salt until stiff peaks form.

  11. Gently fold the whipped egg whites into the cheese mixture until just combined.
