Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Pickled Cabbage

Ingredients

Directions

Prepare the cabbage

  1. Cut the red cabbage in half and remove the stalk.

  2. Wash the cabbage well in salt and cold water.

  3. Slice the cabbage thinly.

  4. Lay the slices in a large pan and sprinkle a handful of salt over each layer of slices.

  5. Cover the top with salt.

  6. Leave for two days, turning the slices morning and evening and adding more salt each time.

  7. Drain the slices on a sieve for one day.

Make the spiced vinegar

  1. Combine the vinegar, mace, cloves, allspice, peppercorns, and ginger in a saucepan.

  2. Bring the mixture to a boil.

  3. Pour the vinegar and spices into a broad pan to cool.

Pack and seal

  1. Place the cabbage in a stone jar.

  2. Pour the cooled vinegar and spices over the cabbage, ensuring it is fully covered.

  3. Let the cabbage soak up the vinegar, adding more vinegar as needed.

  4. Seal the jar with wash leather, brown paper, or a bladder.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red cabbage
Forms the bulk of the pickle and, once salted and drained, becomes crisp and ready to absorb the vinegar.
Vinegar
Provides the acidity that preserves the cabbage and gives the pickle its sharp flavour.
Coarse sea salt
Draws water out of the cabbage, softening it and concentrating its flavour before pickling.
Ginger
Adds a warm, aromatic note to the spiced vinegar that penetrates the cabbage.

The step that matters

Salting and draining the cabbage. Salt draws moisture out of the cabbage through osmosis. Enough salt and time are needed to remove water, otherwise the vinegar dilutes and the pickle becomes soft and less well preserved.

Swap the mace

How well each one fits the dish's main ingredients (cabbage, vinegar, clove, allspice, ginger):

  1. Cinnamonfits better
  2. Turmericfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against cabbage, vinegar, clove, allspice, ginger. Candidates are from the same food group and used in at least 100 recipes.
