Ingredients

Directions

Prepare the broth

  1. Wash the mutton well until clean.

  2. Place the meat in a large saucepan with 3 pints of cold water and bring to a boil.

  3. Wash the pearl barley or rice in cold water.

  4. Once the water boils, add the barley or rice and salt to help the scum rise.

  5. Reduce heat and let it simmer gently for 2.5 hours.

  6. Skim the broth occasionally with a spoon.

Make the parsley sauce

  1. For the sauce, wash and finely chop the parsley.

  2. Melt the butter in a saucepan over medium heat.

  3. Stir in the flour until smooth.

  4. Add ½ cup of broth to the butter and flour mixture, stirring until it boils and thickens.

  5. Stir in the chopped parsley and keep warm until ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the meat and rich flavour that gives the broth its body.
Pearl barley or rice
Thickens the broth slightly and adds body as it softens during simmering.
Butter
Forms the fat base of the sauce and carries flavour.
Flour
Thickens the melted butter into a smooth roux that sets the sauce.
Parsley
Adds fresh, green aroma and flavour to the sauce.

The step that matters

Adding the broth to the butter and flour. Stirring the liquid into the roux gradually keeps it smooth. Adding it all at once, or stopping before it boils, can leave lumps and a thin sauce, because the starch needs heat to thicken.

Swap the parsley

How well each one fits the dish's main ingredients (mutton, barley, butter, flour):

  1. Capersfits better
  2. Nutmegfits about as well
  3. Turmericfits about as well
  4. Parsleythe original

Fit is the average pairing score against mutton, barley, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
