Ingredients

Directions

Prepare

  1. In a small bowl, combine the yolks of two eggs and the white of one.

  2. Add ½ cup of beef tea and ¼ teaspoon of coarse sea salt.

  3. Whisk the eggs and beef tea together until well combined.

  4. Butter the inside of a small heatproof dish.

  5. Pour the mixture into the buttered dish.

Cook and serve

  1. Butter a piece of parchment paper and place it over the top of the dish, securing it with string.

  2. In a saucepan, bring water to a boil and place the dish inside, ensuring the water does not touch the paper.

  3. Reduce the heat and let it simmer for 15 minutes without boiling.

  4. Remove the dish from the saucepan, take off the paper, and serve.

What each ingredient does

Eggs
Coagulate when gently heated, setting the liquid into a firm, sliceable custard.
Beef tea
Supplies the liquid base and savory flavour that the custard sets in.

The step that matters

Simmer without boiling. Egg proteins set gently at low temperatures; boiling water can overheat the custard, causing it to curdle, weep or turn grainy and rubbery.
