Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Gives the stock its body and rich meaty flavor as it simmers.
Corn starch
Thickens the soup as it cooks, giving it a smooth, velvety body.
Sweet cream
Adds richness and a soft, silky mouthfeel to the finished soup.
Blanched almonds
Contribute nutty flavor and a fine texture that lightly thickens the soup.

The step that matters

Cook butter and corn starch together before adding to the soup. Cooking the starch in fat first coats the granules so they disperse evenly instead of clumping. Stirring it into boiling liquid without this step can leave lumps and an uneven, gluey texture.

Swap the onion
