Roasted Turkey

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cook the chopped onion slightly in a frying pan.

  2. Soak the bread in oyster juice until soft, then season with salt, pepper, and sage.

  3. Cook the soaked bread mixture slightly in the onion pan, then remove from heat.

  4. Add the oysters and beaten eggs to the mixture and stir to combine.

  5. Stuff the turkey with the dressing and bake at 300°F (150°C) for 3 hours.

  6. Make gravy from the drippings in the pan, adding chopped liver and gizzard.
