What each ingredient does

Chicken
Provides the main bulk and meaty texture of the croquettes.
Mushrooms
Add moisture, earthy flavour, and body to the filling.
Flour
Thickens the broth into a binding sauce that holds the filling together.
Eggs
Yolks enrich and bind the filling, while beaten eggs help the crumbs adhere.
Butter
Adds fat and richness and helps cook the onion and flour base.
Sherry
Adds acidity and aromatic depth to the savoury filling.

The step that matters

Let the mixture cool before shaping. A warm, loose filling will not hold its cork shape and may break apart in the hot lard. Cooling lets the starch-thickened mixture firm up enough to form and coat cleanly.

Swap the onion

How well each one fits the dish's main ingredients (chicken, mushroom, butter, flour, pepper, sherry, egg):

  1. Capsicumfits better
