Curry Made of Dressed Meat
Ingredients
Directions
Make the sauce
Melt the drippings in a stew-pan until they fizzle.
Fry the apple and onions in the drippings until tender.
Remove the apple and onions, and rub them through a sieve.
Mix the pulp with curry powder, flour, and salt, moistened with a little stock or water.
Add more stock to make up ½ pint and pour the mixture into the stew-pan.
Simmer and serve
When the sauce simmers, add the meat and simmer gently for 30 minutes.
Stir in cream or milk just before serving for added richness.
Serve with a loosely piled border of rice around the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Cold meat
- Is the main protein, gently heated in the curry sauce until warmed through and tender.
- Onions
- Break down when fried and sieved, adding body and sweetness to the sauce.
- Apple
- Cooks into the pulp that thickens and sweetens the curry sauce.
- Flour
- Thickens the sauce as it simmers with the stock.
- Curry powder
- Provides the spiced flavour that defines the dish.
The step that matters
Sieving the fried apple and onions. Pressing them through a sieve breaks the fibres into a smooth pulp, which gives the sauce an even body. Lumps left behind would make the sauce grainy.
Swap the apple
How well each one fits the dish's main ingredients (meat, onion, flour, cream, rice):
- Avocadofits better
- Coconutfits better
- Raisinfits better
- Applethe original
Fit is the average pairing score against meat, onion, flour, cream, rice. Candidates are from the same food group and used in at least 100 recipes.
