Why it works: Mushroom and shallot are a kitchen classic. They rank in the top 4% of all ingredient pairs, and 1,982 recipes mention both. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Butter
- Adds fat and richness, and helps carry flavour from the browned vegetables.
- Flour
- Thickens the sauce as it cooks with the butter and then the stock.
- Brown stock
- Forms the liquid base of the sauce and supplies most of its savoury flavour.
- Mushrooms
- Contribute earthy, savoury flavour to the sauce.
- Onion
- Browning in the butter builds sweetness and savoury depth into the sauce.
The step that matters
Frying the vegetables until browned. Browning the vegetables in butter creates deeper savoury flavours through the Maillard reaction. Pale vegetables give a flatter, less complex sauce, so they should be cooked until well coloured before the flour and stock go in.

Fit is the average pairing score against mushroom, carrot, shallot, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
