Artichokes Al Inberno

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Boil the artichokes for about 10 minutes.

  2. Remove the artichokes and place them in a pan.

  3. Gently open the leaves of each artichoke.

Make the stuffing

  1. In a separate pan, heat the butter and sweet oil until hot.

  2. Add 2 anchovies to each artichoke, dissolve well, and remove bones.

  3. Stir in the chopped garlic, parsley, and grated bread.

  4. Cook the stuffing for about 8 to 10 minutes.

Bake and serve

  1. Stuff the artichokes with the mixture and bake in a 400°F (200°C) oven for about 5 minutes.

  2. Serve hot.

What each ingredient does

Artichokes
Form the edible base that holds the stuffing while it bakes and softens.
Butter
Adds richness and moisture, carrying flavor through the stuffing.
Salted anchovies
Dissolve into the fat to add deep savory, salty flavor.
Garlic
Adds pungent aroma that mellows as it cooks in the fat.
Grated bread
Soaks up the buttery oil and gives the stuffing body and texture.

The step that matters

Dissolving the anchovies in the hot butter and oil. Anchovies need enough heat and fat to melt fully into the mixture; if they stay in pieces, the stuffing tastes harsh and salty in spots. Removing the bones before adding them avoids gritty, unpleasant bites.

Swap the clove

How well each one fits the dish's main ingredients (artichoke, butter, garlic, parsley, bread):

  1. Capersfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against artichoke, butter, garlic, parsley, bread. Candidates are from the same food group and used in at least 100 recipes.
