Scalloped Corn

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove the kernels from the corn using a sharp knife.

  2. Layer corn in a baking dish.

  3. Season the corn with butter, pepper, and salt.

  4. Add a layer of cracker crumbs.

  5. Add another layer of corn.

  6. Season the corn again.

  7. Top with a final layer of cracker crumbs.

  8. Pour in enough sweet milk to just cover the crumbs.

Bake

  1. Bake at 350°F (175°C) for 30 minutes.

What each ingredient does

Corn
Forms the bulk of the dish and provides its sweet, tender body.
Cracker crumbs
Absorb the milk and help hold the layers together as they bake.
Sweet milk
Moistens the crumbs and corn and sets into a soft custard as it bakes.
Butter
Adds richness and fat that carries flavor and browns the top slightly.
