Add concentrated fruit flavour and a soft, chewy texture throughout the filling.
Apples
Add moisture and tartness that balances the sugar and dried fruit.
Suet
Adds richness and fat that carries spice flavour and keeps the filling moist.
Sugar
Sweetens the filling and helps preserve it along with the spirits.
