Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam, they trap air and give the dessert its light, airy structure.
Gelatin
Sets the liquid mixture into a firm, sliceable, elastic texture as it cools.
Sugar
Sweetens the dessert and helps stabilise the whipped egg white foam.

The step that matters

Beat in the dissolved gelatin. Gelatin must be fully dissolved and warm enough to stay liquid, then added to the foam while still fluid. If it cools or sets early, it forms lumps and the foam loses volume.
