Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet cream
Provides richness and the body of the custard.
Egg whites
Beaten to stiff peaks and cooked, they thicken the cream and give it a light, set texture.
Lady fingers
Line the dish, giving the chilled cream a soft, cake-like base.

The step that matters

Cooking the cream with the egg whites. Stirring constantly keeps the egg whites from sitting on the hot bottom of the pan and scrambling, which would leave the cream grainy instead of smooth and thickened.

Swap the vanilla

How well each one fits the dish's main ingredients (cream, egg):

  1. Vanillathe original
  2. Raspberryfits about as well
  3. Strawberryfits less well
  4. Coconutfits less well

Fit is the average pairing score against cream, egg. Candidates are from the same food group and used in at least 100 recipes.
