What each ingredient does

Gherkins
Form the crisp-textured body of the pickles once packed and covered.
Brown sugar
Adds sweetness that balances the sharp vinegar and the spices.
Vinegar
Provides the acidity that preserves the pickles and gives them their tang.
Mustard seed
Adds pungent, sharp flavour that deepens as the pickles sit.
Alum
Helps firm the cucumber tissue so the pickles stay crisp.
White onions
Add mild sweetness and aromatic body to the packed jars.

The step that matters

Soaking the gherkins in strong brine. Salt draws water out of the cucumbers through osmosis, firming their texture and reducing excess moisture so they stay crisp rather than soft in the sweet vinegar.
