Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mix sour milk, corn meal, flour, sugar, and salt. Let it stand overnight.

  2. In the morning, add eggs and melted butter to the mixture.

  3. Dissolve baking soda in water and add to the mixture.

  4. Pour boiling water over corn meal to moisten it and beat until cool.

  5. Add cooked hot fine hominy and mix well.

  6. Incorporate sweet lard or butter and salt, then add beaten eggs.

  7. Finally, stir in sweet milk.

  8. Bake in two buttered tins at 400°F (200°C) until set, and serve in the tins.
