Ingredients

Directions

The book says “a quite moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the egg whites until stiff.

  2. Gradually beat in the granulated sugar.

  3. Gently fold in the grated chocolate and chopped walnuts.

Bake and cool

  1. Drop spoonfuls onto well-greased tins or pans.

  2. Bake in a 350°F (175°C) oven for about 20 minutes.

  3. Allow to cool completely in the pans before removing.

What each ingredient does

Egg whites
Whipped to a stiff foam that gives the macaroons their light, airy structure.
Granulated sugar
Stabilizes the whipped whites and adds sweetness and a glossy, chewy texture.
Unsweetened baker's chocolate
Provides the chocolate flavor and fat, adding richness and body to the batter.
Walnuts
Add texture and a nutty crunch that contrasts with the soft interior.

The step that matters

Gently fold in the grated chocolate and chopped walnuts. Folding rather than stirring keeps the air whipped into the egg whites. Overmixing deflates the foam, so the macaroons bake up dense and flat instead of light.

Swap the walnut

How well each one fits the dish's main ingredients (egg, sugar, chocolate):
