Old Fashioned Molasses Candy
Ingredients
Directions
In a large kettle, pour in the molasses and place over low heat.
Boil slowly for about 30 minutes, stirring constantly to reduce the quantity.
If it threatens to overflow, move it to the back of the stove or lower the heat.
Avoid burning, especially towards the end of boiling.
To test, drop a little in cold water; if it snaps like a pipe-stem, add the carbonate of soda.
Stir quickly and pour into greased pans to cool.
Once cool enough to handle, pull the candy quickly to lighten its color.
