Ingredients

Directions

  1. Make a small quantity of white stock by simmering chicken bones, veal, onion, mace, white pepper, and salt for 1 hour.

  2. Add ½ cup of white wine to improve the flavor and let it cool.

  3. Remove all fat from the cooled stock and use it to make your white sauce.

  4. Warm the white parts of a fowl, chickens’ kidneys, cocks’ combs, quenelles, truffle skins, artichoke bottoms, and mushrooms in the white stock.

  5. Fill the vol-au-vent case with the mixture and garnish with fried croutons or prawns.
