Turkey Stuffed with Truffles

Ingredients

Directions

Prepare the stuffing

  1. Prepare the turkey for roasting.

  2. In a bowl, mix the minced white meat, foie gras, fat bacon, and garlic. Mince some truffles and add them to the stuffing.

  3. Leave the rest of the truffles whole or sliced.

  4. In a saucepan, combine the stuffing, whole or sliced truffles, salt, pepper, nutmeg, and laurel leaf. Cook over low heat for 20 minutes.

  5. Let the mixture cool.

Stuff and rest the turkey

  1. Stuff the turkey with the mixture, being careful not to pack it too tightly.

  2. Sew up the opening.

  3. Refrigerate the stuffed turkey for 2-3 days to absorb the truffle flavor.

Roast and serve

  1. When ready to roast, cover the breast with white paper. Place thin slices of bacon on top of the breast.

  2. Roast for about 2 hours.

  3. Remove the paper before it's done to brown the breast.

  4. Cook sliced truffles in the turkey gravy. Serve as a sauce.

What each ingredient does

Turkey
Forms the main body of the dish, carrying the stuffing and roasting to cook through.
Foie gras
Adds richness and fat, keeping the stuffing moist and silky as it cooks.
Fat bacon
Adds fat that bastes the stuffing and meat, and its slices help the breast stay moist.
Truffles
Provide the earthy aroma that flavors the stuffing and the gravy sauce.
White meat from a fowl
Gives the stuffing body and structure as its minced texture binds with the fats.
Garlic
Adds pungent aroma that mellows as it cooks into the stuffing.

The step that matters

Refrigerating the stuffed turkey. Resting the stuffed bird for 2-3 days lets the truffle aroma move into the surrounding fat and meat. Packing the stuffing too tightly can prevent even flavor transfer and heat penetration during roasting.

Swap the garlic
