Ingredients

Directions

Make the veal base

  1. Mince the veal and place it in a stewpan with cold water and soaked barley.

  2. Simmer gently for 2 hours.

  3. Strain and pound the meat and barley well, using the cooking liquid to help pass it through a sieve.

Set and serve

  1. Add salt, pepper, and the isinglass dissolved in a little water.

  2. Whip the cream and mix it lightly into the mixture.

  3. Pour into tiny molds and refrigerate until set.

  4. When turned out, decorate with hard‑boiled eggs: pass the yolks through a sieve and chop the whites finely.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main body and savoury flavour of the cream once simmered and pounded smooth.
Isinglass
Gelatin-like setting agent that firms the mixture so it holds its shape when turned out.
Cream
Adds richness and a soft, light texture when whipped and folded in.
Pearl barley
Thickens the mixture and adds body as it cooks and is pounded with the meat.

The step that matters

Passing the meat through a sieve. Pounding and straining the cooked veal and barley creates a fine, smooth texture. Leftover fibres or lumps would make the set cream grainy, so the mixture must be pressed through thoroughly while still warm and moist with cooking liquid.
