What each ingredient does

Rice
Provides the starch that cooks into the grains, so it forms the body of the dish.
Coarse sea salt
Seasons the cooking water so the rice is flavoured as it absorbs it.

The step that matters

Strain and rinse the rice after cooking. Rinsing with cold water stops the cooking and washes off surface starch, so the grains stay separate instead of clumping.
