Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

Assemble

  1. Remove bones from the fish and mix it with anchovy sauce, salt, pepper, and parsley.

  2. Prepare clean shells or a baking dish.

  3. Layer sauce at the bottom, then add a layer of fish, repeating until fish is in small mounds.

  4. Cover each mound with bread crumbs and top with a piece of butter.

Bake

  1. Bake for about 10 minutes until the bread crumbs are golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the dish and provides the protein that sets when baked.
Bread crumbs
Form a crisp, golden topping as they brown in the oven.
Butter
Adds richness and moisture, and helps the crumbs brown.

The step that matters

Baking until the crumbs are golden. Fish cooks quickly and can dry out if baked too long, while the crumb topping needs enough heat to brown. Watching the crumbs rather than the clock helps balance both.

Swap the parsley

How well each one fits the dish's main ingredients (fish, butter, anchovy, sauce, pepper, bread):

  1. Capersfits about as well
  2. Parsleythe original
  3. Tarragonfits less well
  4. Thymefits less well

Fit is the average pairing score against fish, butter, anchovy, sauce, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
