Brown Cake

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Make short crust pastry and cut it into rounds.

Assemble and bake

  1. In a bowl, mix together currants, sugar, chopped peel, mixed spice, nutmeg, and butter.

  2. Place a tablespoonful of the mixture on each round of crust, folding the edges together. Cut a small hole in the top of each cake.

  3. Bake on a greased baking sheet for 10 minutes.

What each ingredient does

Currants
Provide the sweet, chewy fruit filling that gives each cake its body.
Sugar
Adds sweetness and helps the filling brown as it bakes.
Butter
Adds fat, giving the filling richness and a softer texture.
Short crust pastry
Forms the crisp, sturdy case that holds the filling.
