Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Reduced velouté sauce
Provides the base body and thickness that the sauce is built on.
White chicken consommé
Adds liquid and savory chicken flavor, thinning the velouté to a pourable sauce.
Essence of mushrooms
Adds concentrated earthy mushroom aroma and savory depth.
Boiling cream
Adds richness and a smooth, silky texture to the finished sauce.
Chicken glaze
Adds concentrated meaty flavor and gloss, deepening the sauce's savoriness.
Fresh butter
Adds fat for a glossy finish and rounded, velvety mouthfeel.

The step that matters

Stir in boiling cream just before serving. Cream held at a simmer for long can reduce further, separate or turn grainy, and over-reduction thickens the sauce too much. Adding it last keeps the sauce smooth and its flavor fresh.
