Turtle Soup

Ingredients

Directions

  1. Soak turtle fat in cold spring water for several hours to cleanse it.

  2. Use a meat saw to divide the turtle shells into manageable pieces.

  3. Scald the shells in boiling water to separate them from the horny substance.

  4. Place the turtle pieces in a large stockpot with fresh hot water and boil until the glutinous substance separates from the bones.

  5. Cool the turtle pieces, then cut them into 1.5-inch squares.

  6. Return the bones to the broth and boil for an additional hour to extract flavor.

  7. In a separate stockpot, melt butter and layer with ham, beef, veal, and hens.
