Ingredients

Directions

Prepare the broth

  1. Prepare giblet broth according to the previous soup recipe.

  2. Trim giblets and put them in a soup pot.

  3. Skim fat from the broth's surface.

  4. Whip egg whites with a little cold water and add them to the broth to clarify.

  5. Bring the broth to a boil, then add sherry.

  6. Once it boils again, reduce heat and simmer for 20 minutes to set the eggs.

  7. Strain the broth through a napkin onto the giblets, reserving 1 quart.

Finish the soup

  1. In a separate saucepan, boil the white parts of celery and leeks cut into 1-inch lengths.

  2. Add the boiled vegetables to the giblets, season to taste, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped whites collect cloudy particles as they set, clarifying the broth.
Sherry
Adds aroma and a subtle sweet-acidic flavour to the broth.
Leeks
Contribute mild onion-like sweetness and aroma to the finished soup.
Celery
Adds savoury, aromatic flavour and tender vegetable texture to the soup.

The step that matters

Simmering to set the egg whites. Egg whites must be brought up gently and simmered without boiling hard. Vigorous boiling breaks the coagulated raft apart, returning cloudiness to the broth and defeating the clarification.

Swap the celery

How well each one fits the dish's main ingredients (lemon, egg, sherry, leek):

  1. Thymefits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Celerythe original

Fit is the average pairing score against lemon, egg, sherry, leek. Candidates are from the same food group and used in at least 100 recipes.
