Boiled Brisket of Beef, a l'ANGLAISE

Ingredients

Directions

  1. Wash the brisket in cold water and place it in a large oval braising pan.

  2. Garnish with carrots, onions, and celery.

  3. Pour in enough cold water to nearly fill the pan and set it to boil on the fire.

  4. Skim off the scum as it rises to the surface.

  5. Once skimmed, reduce heat and let it gently boil for 4 to 5 hours, depending on the size of the brisket.

  6. When done, transfer the beef to an earthenware dish, trim, and glaze it.

  7. Garnish with boiled turnips and carrots cut into decorative shapes.

  8. Place small suet dumplings at each end, pour gravy under the beef, and serve.
