Ingredients

Directions

  1. Prepare the wild ducks, widgeon, or teal as directed in the previous article.

  2. Skewer the birds and cover the breasts with seasoning.

  3. Wrap them securely in oiled paper and roast over a brisk fire.

  4. When nearly done, remove the paper and move them closer to the fire for a light-brown color.

  5. Fillet the birds, leaving the pinion bones on, and trim them.

  6. Dish them up immediately, placing a crouton between each fillet.

  7. Combine the gravy from the birds with Bigarrade sauce and pour it over the fillets before serving.
