Small Nougats, a LA Chantilly

Ingredients

Directions

Prepare the nuts

  1. Scald the filberts, remove the skin, and split each kernel into four pieces lengthwise.

  2. Dry the nuts on a baking sheet in the oven.

Make the nougat

  1. Stir the powdered sugar in a boiler over heat until ready.

  2. Mix the dried nuts into the sugar.

  3. Prepare six small oiled dariole molds.

  4. Fill each mold with the nougat mixture, using a stick to press it into the sides.

  5. Trim any excess nougat above the edge of the molds.

  6. Turn the nougats out onto a baking sheet.

Assemble and serve

  1. Fill each nougat with whipped cream flavored with vanilla or maraschino.

  2. Top with strawberries if in season and serve in a pyramidal form on a napkin.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Filberts
Provide the nut body and flavor of the nougat, held together by the sugar.
Powdered sugar
Melts and sets into the binding that holds the nuts together as a firm nougat.
Whipped cream
Adds a light, moist filling that contrasts with the dense nougat.

The step that matters

Stirring the sugar over heat. Powdered sugar must be heated gently and stirred until it melts evenly; if it scorches or is overheated, it turns bitter and brittle, and the nougat will not bind properly.

Swap the filbert

How well each one fits the dish's main ingredients (sugar, cream, vanilla):

  1. Chestnutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Filbertthe original

Fit is the average pairing score against sugar, cream, vanilla. Candidates are from the same food group and used in at least 100 recipes.
