What each ingredient does

Calf's liver
Main ingredient; its tender, rich texture is the core of the dish.
Egg
Binds the stuffing so it holds together inside the liver.
Bread crumbs
Soak up juices and give the stuffing body and a soft texture.
Cold butter
Adds richness and a glossy fat finish to the hot liver.
Fat bacon
Adds fat and savoury flavour as the liver roasts.
Chopped anchovy
Adds salty, savoury depth to the stuffing.

The step that matters

Boiling the liver until cooked nicely. Liver is lean and its proteins tighten quickly with heat. Overcooking makes it dry, grainy and tough, so it should be removed as soon as it is just cooked through.
