What each ingredient does

Melon
Serves as the vessel that is stuffed and pickled, absorbing the vinegar brine over days.
Vinegar
Acidic brine that preserves and sharpens the flavor of the melon during pickling.
Mustard seeds
Add pungent, sharp heat to the stuffing as they mellow in the vinegar.
Flour of mustard
Thickens the boiling brine slightly and adds pungent mustard flavor on the final day.
Scraped horseradish
Contributes sharp, pungent heat that intensifies the pickling liquid.

The step that matters

Keep the melon fully covered with vinegar. Any part of the melon left above the brine can spoil or dry out during the multi-day pickling, so the liquid must cover it throughout.

Swap the melon
