Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut veal into evenly shaped pieces.

  2. Trim off the skin.

  3. Season veal with salt, white pepper, and baked flour.

  4. Trim, wash and wipe mushrooms.

  5. Rub a pie dish with garlic.

  6. Butter the dish well.

Bake and serve

  1. Layer veal and mushrooms alternately in the dish.

  2. Dot the top with small pieces of butter.

  3. Cover with another dish.

  4. Bake at 300°F (150°C) for 1½ hours.

  5. If using truffles, slice them and layer sliced truffles instead of mushrooms.

  6. Serve hot with lemon slices on the side.
