What each ingredient does

Potatoes
Form the bulk of the salad and hold the dressing as they absorb flavour while warm.
Lucca oil
Adds fat and moisture, coating the vegetables and carrying flavour.
Tarragon vinegar
Adds acidity that brightens the vegetables and balances the oil.
Spanish onion
Adds sharp aroma and pungency to the salad.

The step that matters

Breaking up the hot vegetables. Dressing is absorbed best while the vegetables are still warm, since starch and fat bind more readily when hot. Breaking them up while hot lets the oil and vinegar coat evenly; letting them cool first makes the dressing sit on the surface and the salad taste uneven.
