Ingredients
Directions
Prepare the cherries
Gather cherries in dry weather and use immediately.
Cut off the stem, leaving a quarter inch of the cherry.
Wipe each cherry with a clean, soft cloth.
Pack and seal
Place cherries in wide-necked jars and sprinkle sugar candy on top.
Tie jars with two bladders separately.
Cook and finish
Place jars in an open pan with cold water up to the neck of the jars.
Slowly bring the water to a boil and then simmer for 45 minutes.
Remove the pan from heat and let jars cool in the water.
Take jars out, wipe them, and label.

What each ingredient does
- Morella cherries
- Provide the fruit body and juice that softens and sets into the preserve.
- Sugar candy
- Sweetens the fruit and draws out juice, helping preserve the cherries.
The step that matters
Simmer the water gently. Bringing the water to a boil and then simmering slowly heats the jars evenly. Rapid boiling can crack jars and overcook the fruit, so the water should not be allowed to churn hard.
