Bottled Gooseberries
Ingredients
Directions
Pick off the stems from the gooseberries and rub them with a clean, dry cloth.
Place the gooseberries into wide-mouthed glass bottles.
Put the bottles in a large pot with hay underneath and between them.
Fill the pot with cold water up to the neck of the bottles and bring to a boil.
Simmer until the gooseberries change color and shrink.
Remove the bottles and use one to fill the others, then pour in boiling water to cover the gooseberries.
Once cool, pour enough salad oil over the top to cover as thick as a penny.
Seal with bladder, label, and store in a dry closet.
