Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ham
Is the main cut that is cooked and flavoured by the simmering liquid.
Moist sugar
Adds sweetness and a touch of molasses flavour to the cooking liquid.
Onion
Contributes savoury, aromatic flavour to the stock as it simmers.
Carrots
Add natural sweetness and body to the simmering liquid.

The step that matters

Simmer gently until done. A rolling boil toughens the meat and makes it dry and stringy, so the liquid should stay at a gentle simmer throughout cooking.

Swap the clove

How well each one fits the dish's main ingredients (ham, garlic, onion, carrot, turnip, celery, mustard):

  1. Capersfits better
  2. Parsleyfits better
  3. Thymefits better
