Ingredients

Directions

Prepare the stuffing

  1. Peel and slice the onions.

  2. Place the sliced onions in a bowl with salt and pour boiling water over them. Let the onions sit for 2 hours.

  3. Wash the onions in cold water.

  4. Chop the onions finely.

  5. Mix the chopped onions with sage, salt, and black pepper.

  6. Stuff the onion mixture into the goose.

Roast the goose

  1. Roast the goose over a fire for 1 hour and 45 minutes, basting constantly.

Make the gravy

  1. In a pan, fry the sliced onion and gravy beef until browned. Dust the onion with brown sugar while frying.

  2. Add the beef and onion to more than 1 pint of water.

  3. Stew the mixture for 2.5 hours.

  4. Pour off the dripping from the goose.

  5. Mix the dripping with the gravy, adding pepper, salt, and baked flour. Stir the mixture until smooth.

  6. Strain the gravy through a sieve.

  7. Serve the goose on a hot dish with some gravy poured over it and the rest in a tureen.

What each ingredient does

Goose
Is the main body of the dish, carrying the stuffing and fat that bastes during roasting.
Onions
Soften and sweeten through soaking and browning, adding moisture and flavor to the stuffing and gravy.
Gravy beef
Browned first to build savory depth, then stewed to enrich the gravy.
Baked flour
Thickens the gravy as it cooks with the dripping and liquid.

The step that matters

Roast the goose over a fire for 1 hour and 45 minutes, basting constantly.. Constant basting keeps the surface moist while fat renders out, so the skin browns evenly instead of drying or scorching.

Swap the onion

How well each one fits the dish's main ingredients (sage, pepper, beef, sugar, flour):

  1. Capsicumfits better
