Lean ‘Villeroi’-sauce

Ingredients

Directions

Make the roux

  1. Strain the fish broth through a cloth and keep it warm.

  2. In a pan, melt the butter and add the flour to make a yellow roux, cooking over moderate heat.

  3. Gradually add the fish broth to the roux, stirring until it begins to boil.

Simmer and finish

  1. Add the mushrooms and parsley, and if the sauce is too thick, lighten it with a few tablespoons of broth.

  2. Boil the sauce for 12‑15 minutes, then strain it into a flat stewpan.

  3. Reduce the sauce until it reaches a good consistency.

  4. Season the sauce and stir in the egg yolks, cooking gently without boiling.

  5. Remove from heat and set aside for use.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish broth
Forms the liquid base that the roux thickens into a sauce.
Butter
Carries the flour into a roux and adds richness to the sauce.
Flour
Thickens the sauce when cooked in fat to form a roux.
Egg yolks
Enrich and thicken the sauce gently as it cooks without boiling.

The step that matters

Stirring in the egg yolks without boiling. Egg yolks contain proteins that set and curdle when overheated, so the sauce must be cooked gently to stay smooth and thick.

Swap the parsley

How well each one fits the dish's main ingredients (fish, butter, flour, mushroom, egg):

  1. Capersfits better
  2. Nutmegfits about as well
  3. Parsleythe original
  4. Tarragonfits about as well

Fit is the average pairing score against fish, butter, flour, mushroom, egg. Candidates are from the same food group and used in at least 100 recipes.
