What each ingredient does

Calf's liver
Forms the main body of the pâté and gives it its rich, savoury flavour.
Eggs
Bind the mixture and set on gentle heat, giving the pâté a firm, smooth structure.
Panada (bread paste)
Adds body and helps the pâté hold together with a smoother, lighter texture.
Fresh bacon
Adds fat and savoury depth that keeps the liver mixture moist and flavourful.
Madeira wine
Adds aromatic sweetness and depth as it reduces into the liver mixture.
Mushrooms
Contribute earthy flavour and moisture to the filling.

The step that matters

Cook the liver until nearly done. Calf's liver turns grainy and dry when overcooked, and it keeps cooking as it cools. Stopping just short of done keeps the pâté tender and smooth once it is pounded and bound with eggs.

Swap the onion
