Ingredients

Directions

  1. Pare the mutton cutlets and season them.

  2. Dip the cutlets into the beaten eggs and roll them in the chopped ox-tongue.

  3. Heat clarified butter in a sauté pan and fry the cutlets on both sides.

  4. Dish the cutlets in a circular order.

  5. Prepare the reform sauce: Pour vinegar into a stewpan, add aromatics, and reduce by one third.

  6. Add brown sauce and melted glaze to the vinegar, and reduce for a few minutes until thickened.

  7. Stir in red-currant jelly until dissolved, then add the montglas mixture and warm without boiling.
