What each ingredient does

Lambs' kidneys
Provide the main meat, which cooks quickly and turns tender when tossed over high heat.
Butter
Carries the heat and adds richness while browning the shallot and kidneys.
Shallot
Adds a mild, sweet aromatic base that flavours the butter before the kidneys go in.
Glaze
Coats the kidneys with a sticky, glossy layer that adds sweetness and flavour.
Lemons
Add acidity that brightens the rich kidneys and glaze.

The step that matters

Toss the kidneys over high heat until just set. Kidneys become tough and rubbery when overcooked. A short, hot toss sears the outside and sets the texture while keeping the centre tender, so they should come off the heat as soon as they firm up.
