Galantine of Turkey, with Jelly
Ingredients
Directions
Singe the turkey and cut off the tips of the legs and wings.
Split the skin along the neck and bone the turkey completely.
Remove some meat from the legs and fillets, cut into large dice, and place in a bowl.
Season the diced meat and mix with double the volume of blanched bacon and a third of raw ham, then baste with Madeira wine.
In a large pot, combine the turkey backbones, all bones, trimmings, and calf’s feet with vegetables, aromatics, and spices.
Cover with light broth, bring to a boil, skim, and set aside.
Prepare a raw mince of veal and fresh bacon, season with salt and spices, and pound well.
Combine the mince with the diced turkey meat and bacon, then fill the turkey with this mixture.
Truss the turkey into an oblong shape and wrap tightly in a small napkin, tying both ends securely.
