Chicken -fillets, Java Fashion
Ingredients
Directions
Soak the swallow nests in cold water until softened, then clean them and poach in poultry broth.
Prepare the chicken fillets by trimming and seasoning both sides with salt and curry powder.
In a sauté pan, heat clarified butter and poach the chicken fillets over brisk heat, turning them until cooked.
Drain the chicken, trim again, and return to the sauté pan, coating with a little velouté sauce mixed with cayenne.
Arrange the chicken fillets in a circular pattern on a plate with a base of poached force-meat.
Drain the swallow nests from the broth, season, thicken with a few tablespoons of sauce, and place them in the center of the dish.
Lightly coat the fillets with more velouté sauce and serve the remaining sauce separately.
