Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Haddock on Toast

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the haddock

  1. Scald the haddock.

  2. Place the haddock on a baking sheet.

  3. Spread 1 ounce of butter over the haddock.

Bake and flake

  1. Cook in a 400°F (200°C) oven for 10 to 15 minutes.

  2. Remove the flesh from the bones and skin.

  3. Chop the flesh finely.

  4. Add pepper and coarse sea salt to taste.

Fry and assemble

  1. Melt the remaining ounce of butter in a saucepan.

  2. Lightly fry the haddock.

  3. Cut the slices of bread into shapes.

  4. Fry the bread shapes.

  5. Top each piece of bread with a little haddock.

  6. Decorate with chopped hard-boiled egg and parsley.

What each ingredient does

Smoked haddock
Provides the main flavour and flaky, moist texture of the topping.
Butter
Adds richness and moisture, and helps the haddock and bread brown.
Slices of bread
Forms the crisp base that holds the haddock topping.

The step that matters

Baking the haddock. Fish protein tightens and dries quickly when overcooked. Checking it around 10 minutes keeps the flesh moist enough to flake gently when chopped.
